ORGANIC HOLIDAY GOOSE (OR TURKEY) RECIPE

INGREDIENTS

  • 1 (12 to 14-pound) Organic Goose Or Turkey
  • 1 lemon, halved
  • 1 apple, cut into chunks
  • 1 carrot, cut into chunks
  • 1 orange, sliced
  • 1 cup celery, chopped

DIRECTIONS

Preheat oven to 450 degrees F.

After cleaning the bird thoroughly , rub inside cavity with lemon juice.   Place apple, carrots, orange and celery into the body cavity. Truss the bird like a turkey (or if using a turkey, like a turkey!)

Place the goose in the preheated oven covered with aluminum foil and reduce oven temperature to 350 degrees  after 1 hour . Cook 20 to 25 minutes per pound. Baste the goose every half hour with  my special basting recipe (see below).

BONUS BASTING RECIPE

In a small sauce pan, combine: 

  • 1 Cup honey
  • 1 Cup Soy Sauce
  • 1 whole Orange,  juiced
  • ½ Cup butter
  • 1 cup Brandy (optional) 

Using just heat enough to melt butter, leave on the stove and baste every half hour.
